Dill means to calm or soothe. It is also known as the meeting house herb because its seeds were chewed during long church services to stay awake and quiet noisy stomachs. Plant your dill in a place protected from wind because its stems are hollow and it isn’t very strong. There are a lot of different varieties of dill recommended for this area. Dukat is a Danish variety recommended for this area that is slow to bolt so gives good foliage for a long time and it also does well in containers. Try this variety for use in dill sauce for fish. Bouquet is also recommended for this area and is grown for its seeds for use in pickling. I have grown both of these and I found that for home usage, Bouquet did best for me. My Dukat tended to be a little gangly and since I live in a windy location, this was a problem for me. In addition to Dukat and Bouquet recommended for this area, Fern Leaf has lovely rich foliage. Delicate is really a commercial production variety and probably not the best choice for your garden. Once established in your garden, dill will come back year after year.
